Papayas with Shrimp Salad 木瓜鲜虾沙拉

Ingredients

1 1/2 cups Yuanxin cooked shrimp, and cut into chunks

1/2 cup mayonnaise

1 tablespoon lemon juice

1 tablespoon minced onion

Salt and pepper, to taste

2 ripe papayas

Lime wedges, for garnish

Steps

  1. Combine the ingredients. Mix the mayonnaise, shrimp, onions, and lemon juice thoroughly in a large bowl.
  2. Season with salt and pepper, if desired.
  3. Cut the papayas in half. Slice them vertically with a sharp knife.
  4. Deseed the papayas. Spoon out and discard all seeds of all four halves.
  5. Add the shrimp mixture to the papayas. Spoon the salad into the papaya holes. Measure the shrimp mixture about half, so each papaya gets equal amounts.
  6. Garnish it with lime wedges. Place one lime wedge near the top or center of the salad for a more presentable approach.
